Pecan and Goat Cheese Crusted Chicken

It's Secret Recipe Club time again. For those of you who aren't familiar with the group, you can find the details here. As soon as I receive my assigned blogger for the month, I check out their blog. It's fun to get to know a little bit about the blogger and read through their recipes.

This month I was assigned Fallon's Cucina. She's a fitness guru who enjoys sharing her recipes with friends and family. Fallon has lots of delicious recipes on her blog, it was hard to choose just one. Since I belong to a couple of baking groups, I try to choose a savory recipe for SRC. I'm always looking for new chicken recipes, especially those that are a little "dressed up".

My husband doesn't really care for mustard so I left it off of his piece of chicken. I didn't think the mustard flavor was very strong but I know he would have picked it out! I loved this recipe. I could just eat the topping. The tang of the goat cheese mixed with the sweetness of the honey and the crunch of the pecans is delicious.

If you're looking for a new chicken recipe for a weeknight dinner or weekend dinner party, give this one a try. You won't be disappointed.



Pecan and Goat Cheese Crusted Chicken

Ingredients
4 chicken breasts
1-2 tablespoons grainy mustard
2 teaspoons clover honey
1 cup raw pecans, crushed
1/2 cup goat cheese, crumbled
1/4 teaspoon salt
1/8 teaspoon black pepper

Directions
Preheat the oven to 375 degrees F. In a medium bowl, combine the honey, crushed pecans, goat cheese, salt and pepper. Set aside.

Put the chicken breast onto a baking sheet that has been oiled with olive oil or use a nonstick foil/parchment paper. Season with salt and pepper on both sides and brush the chicken breast with mustard. Press the pecan/goat cheese mixture onto the top of the chicken breasts. Bake for 40-45 minutes, until the chicken is cooked through.

Crock Pot Pork Chops - Secret Recipe Club

I always look forward to receiving my assignment for Secret Recipe Club. Will it be a blogger I know, one I am familiar with or a new one I’ve never visited before? This month’s assignment was Crumbs and Chaos. Crumbs and Chaos is made up of 4 sisters, Becca, Emily, Kate and Megan. I "met" them last month when Becca had my blog for SRC.

In an effort to choose something besides desserts for my SRC assignments, I noticed the Crumbs and Chaos ladies feature Crock Pot recipes. I am always searching for new crock pot recipes to add to my collection. We don’t have pork chops often at my house. Occasionally we will have them grilled in the summer but never during the winter months. Pork chops cooked inside always remind me of the ones my mother made as a kid, fried and dry. They reminded me of shoe leather, not that I’ve ever eaten shoe leather.

When I saw Emily of Crumbs and Chaos' recipe for Crock Pot Pork Chops, with mushroom sauce, how could they be anything but moist and delicious. I substituted flour for the tapioca. The sauce wasn't as thick as I would have liked so I added a little cornstarch and thickened it stove top. Served along side noodles or rice, this makes the perfect weeknight dinner.



Crockpot Pork Chops with Mushroom Sauce
  • 4-6 boneless pork chops
  • 1 can mushroom soup
  • 3/4 cup white wine
  • 1- 4oz. can sliced mushrooms
  • 2 Tablespoons quick cooking tapioca
  • 2 teaspoons Worcestershire sauce
  • 1 beef bouillon granules or 1 beef bouillon cube
  • 1/4 teaspoon minced garlic
  • 3/4 teaspoon dried thyme, optional
Instructions
Place pork chops in slow cooker.
Combine remaining ingredients and pour over pork chops.
Cook on low for 8-10 hours.
Serve over rice or noodles.

Baked Chicken with Pamesean and Herbs

Do you participate in Secret Recipe Club? If you do, then you are familiar with the group founder, Amanda. If you don't, you can check it out here. It's a great group to belong to but I think there might be a waiting list right now. This recipe is one I found on Amanda's blog, Amanda's Cookin'.

I am always looking for new chicken recipes, especially ones you could serve company. This is one of those recipes, delicious and makes a beautiful presentation.




Baked Chicken with Parmesan and Herbs

4 skinless chicken breasts
1 cup panko bread crumbs
2/3 cup freshly grated Parmesan cheese
1 teaspoon fresh rosemary, chopped
2 teaspoons fresh thyme leaves
1/2 cup unsalted butter
1 teaspoon Dijon mustard
1 teaspoon Worcestershire
1 teaspoon minced garlic

Preheat oven to 400 F. Combine panko bread crumbs, parmesan cheese and fresh herbs. In a saucepan, melt butter & stir in mustard, Worcestershire and garlic. Remove from heat. Dip chicken in butter, then roll in bread crumb mixture, pressing gently to make crumbs cling. Place in shallow baking pan. Bake 45 minutes or until golden.

Pumpkin Alfredo - Secret Recipe Club

It's Secret Recipe Club time again! Last month, when I said it was my fourth month participating, I was wrong. It was my sixth month. WOW, I can't believe it was June when I started. I've met some great bloggers and cooked up some delicious recipes.

My first month, I was assigned the Hagis and the Herring and made their Crunchy Roasted Potatoes and Carrots. Month two was Creative Culinary and her beautiful Lavender Martini. August was month three and The Wednesday Baker's Wild Blueberry Muffins. September was fellow Omaha blogger Biking and Baking's, Rosemary Squash Soup. Just in time for football season, October brought me Sticky Chicken Wings from Lavender and Lime. November was a delicious holiday breakfast idea, Eggs en Cocette from Searching for Spice.

For December, our hostess Tina of Mom's Crazy Cooking suggested we find a holiday recipe to share. Having not tired of eating pumpkin, I was drawn to Pumpkin Alfredo from Veggie Converter. Kristi has amazing vegetarian and vegan recipes, most of which I found would be easy to change or convert if you aren't vegetarian. Although we aren't vegetarian, we try to eat at least one meatless meal a week. To lighten the recipe up a little, I decreased the butter and increased the milk. The pasta was still rich and creamy.

When Tim saw what I was making, he questioned the peas. I used the small canned peas. They added nice flavor and color to the dish. As I was putting the finishing touches on the dish, I was wishing I had some fresh sage to add. I think sage would add a nice finishing touch. We enjoyed this hearty pasta dish.



Pumpkin Alfredo

1 pound spaghetti noodles
1 cup peas, fresh or frozen

2-3 cloves garlic, minced
1 stick (1/2 cup) unsalted butter (I used 1/2 stick)
4 ounces cream cheese
3/4 cup pumpkin puree
1/2 cup milk (I used 1 cup of skim milk)
1 tablespoon cornstarch
1 teaspoon Italian seasoning
Salt and Pepper to taste


Directions
Boil spaghetti noodles according to package directions, add peas into the boiling water with 5-7 minutes remaining.

Meanwhile, brown garlic in a small saucepan over medium-low heat. Add butter and cream cheese, allow to melt partially. Add pumpkin and stir. Mix cornstarch with a bit of the milk to create a slurry. Add slurry and remaining milk to pan. Cook a few more minutes, stirring regularly, until thickened. Add Italian seasoning and House seasoning, to taste.

If serving immediately, mix sauce with noodles and peas. If serving later, package noodles and peas separately from sauce. Top with Parmesan cheese, if desired.

Green Bean Salad with Goat Cheese

I love browsing my favorite blogs or finding new blogs I've never explored before. How many food blogs do you think there are on the internet today? Every day I find at least one recipe to bookmark, often they're recipes I haven't made before or wouldn't normally make. Rarely do I prepare a main dish salad for lunch or dinner. When I saw this recipe and realized I had all of the ingredients on hand, it became the perfect Sunday lunch.

Everyone says you eat with your eyes. Anyone would be drawn to the vibrant colors in this salad. Fresh summer green beans, bright yellow corn and juicy red tomatoes make up the pallet for your eyes and feast for your stomach.

When I make this salad again, I would cook the green beans a little longer. While I enjoy my green beans crunchy, cooking just two minutes leaves them a little too crisp for my taste.



Green Bean Salad with Goat Cheese Dressing

Yield:
4 servings

Ingredients:

1 pound green beans, trimmed
2 ounces crumbled fresh goat cheese
Zest of 1 lemon
1 tablespoon lemon juice
2 tablespoons apple juice
1 garlic clove, minced
1/4 teaspoon freshly ground pepper
1/3 cup chopped fresh basil, divided
3/4 cup fresh corn (from 1 ear corn)
1 large tomato, diced

Directions:

Bring a large pot of water to a boil. Add green beans and cook just until they turn bright green and are barely tender, about 2 minutes. Alternatively, you can steam the green beans in a microwave save, lidded glass container. Fill with approximately 1 cup of water, and microwave on high for 2 to 3 minutes or until beans are crisp tender. Drain and rinse with cold water to stop the cooking. Pat dry.

To make the dressing, whisk together goat cheese, lemon zest and juice, apple juice, garlic and pepper in a small bowl. Toss green beans with half the dressing and half the basil or basil and spread on a platter. Top with corn and tomato, drizzle with remaining dressing and sprinkle with remaining basil.

Santa Fe Noodle Bake

When Kraft first introduced Philadephia Cooking Cream, I received a coupon for a free tub. I knew I wanted to use it for some type of pasta dish. Inspired by some of the other noodle dishes I've made, I decided to make a noodle casserole. The cooking cream is a good substitute for sour cream or cottage cheese. If you have kids or are in the mood for comfort food, this dish is for you!!!



Santa Fe Noodle Bake

Ingredients
  • 1 tub Philadelphia Santa Fe Blend Cooking Cream
  • 1-¼ pound Ground Chuck
  • 1 can 15-ounces Rotel Tomatoes
  • ½ teaspoons Salt
  • Freshly Ground Black Pepper
  • 8 ounces, Egg Noodles
  • 1 cup Grated Sharp Cheddar Cheese

Preparation Instructions

Preheat oven to 350 degrees.

Brown ground chuck in a large skillet. Drain fat, then add tomato sauce. 1/2 teaspoon salt and plenty of freshly ground black pepper. Stir, then simmer while you prepare the other ingredients.

Cook egg noodles until al dente. Drain and set aside.

In a medium bowl, combine Philadelphia Cooking Cream and meat mixture. Add plenty of freshly ground black pepper. Add to noodles and stir.

To assemble, add half of the noodle and meat mixture to a casserole. Top with half the cheese. Repeat with noodles and meat mixture and top with remaining cheese. Bake for 20 minutes, or until all cheese is melted.

Quick Crescent Taco Pie

This month's Celebrity Cook Along is Pillsbury! To make it even better, Jo at LazyonLoblolly is giving away a Dough Boy and a cookbook! Gotta love that Dough Boy...and Pillsbury!

When I think of Pillsbury, I often think of desserts. Since I am always looking for new dinner ideas, I chose a main dish. If you like tacos, give this one a try! It was DELICIOUS, one I will be making again soon. It's quick and easy to put together and make's a great weeknight dinner.



Superspeedway Taco Pie

Ingredients:
1 (1.25 oz) package taco seasoning
1 pound ground beef
1/2 cup water
1 (8 oz) package refrigerated crescent rolls
2 cups crushed tortilla chips
1 cup sour cream
1 cup shredded cheddar cheese

Directions:
In a large pan brown your ground beef. Drain of the grease and stir in the seasoning mix and water. Simmer for 5 minutes.

Separate crescent dough into 8 triangles. Place the triangles in a ungreased 10 inch pie pan, pressing to form a crust. Sprinkle 1 cup tortilla chips over the bottom of the crust, Spoon meat mixture over crust and chips. Spread sour cream over meat mixture and cover with cheese. Sprinkle the remaining chips over the top.

Bake at 375 degrees for 20-25 minutes or until crust is brown.

Salt and Pepper Chicken

Isn't it great when you find a recipe you love? Even better when the recipe requires very little time and only has two ingredients? Yes, that's right, besides the chicken itself, just two ingredients. When I saw this recipe over at There's Always Time To Cook, I knew I'd be giving it a try. Carol said it was outstanding! Curious, I tried it that same weekend. She was right, it IS outstanding. In fact, we liked it so well, we had it again the following weekend while camping with friends. I am planning on adding rosemary next time.




Grilled Salt and Pepper Chicken

1 tablespoon coarse salt
1 teaspoon freshly ground pepper
1 whole chicken (3 to 4 pounds), quartered, rinsed, and patted dry ( I used thighs, and removed the skin!)

Preheat grill to medium-high.

Combine salt and pepper. Rub chicken with mixture, covering all sides and shaking off excess. (You may not need all of the mixture.) Or put the mixture in a ziploc with the chicken and shake it all up. Let stand at room temperature 30 minutes.

Place chicken on grill, skin side down. Close cover, and grill 8 minutes. Flip chicken, and close cover. Grill until chicken is cooked through, about 15 minutes more.

Transfer chicken to a plate, and let rest 15 minutes.

Beer Marinated Pork Chops

I first posted this two years ago, thrilled to be grilling after a long winter. If you're like me and have childhood memories of shoe leather pork chops, give this recipe a try. This marinade produces a delicious, tender pork chop.


Pork Chops in Beer Teriyaki Marinade

2/3 cup soy sauce
1/4 cup mirin (syrupy rice wine)
1/4 cup cider vinegar
1/3 cup sugar
2 tablespoons chopped fresh ginger root
2/3 cup of your favorite beer (no dark)
4 1" thick rib or loin pork chops

In a saucepan combine the soy sauce, mirin, vinegar, sugar, gingerroot and the beer. Simmer until the mixture is reduced to about 1 1/3 cups. Let the marinade cool until it is room temperature. In a shallow baking dish or plastic bag, cover the chops thoroughly with the marinade. Marinate overnight, turning them several times.

Pour the marinade in a saucepan and boil it for five minutes. Grill the pork chops on a oiled rack set about 4 inches over glowing coals, basting them with the marinade while cooking, Cook 8 - 10 minutes of each side.

Hamburger Casserole - Revisited

Do you cook as much in the summertime? Although it's not summertime here yet, we've been so busy. Between enjoying the new camper, working in the yard and graduation, there's just not enough hours in the day. Not a lot of recipes to blog about. There's been a lot of pasta, burgers or brats on the grill, leftovers and pizza. The end result? Not many recipes in my drafts folder. Therefore, I am going to share another recipe from my early days of blogging.

My Dad is very much a meat and potatoes man and those two better not be mixed together. Except for this dish! This is the only casserole I can ever remember my Dad eating.



Hamburger Casserole
Into a well buttered casserole dish, place layers in order . Season each layer with salt and pepper.
2 -3 medium potatoes, sliced
2 -3 carrots, sliced
Can of peas (drained, saving liquid)
1 onion, sliced
1 stalk of celery, sliced
Over top of vegetables, placed 1 pound of ground beef, browned and drained.
Combine liquid from peas with can of tomato soup and pour over the top of ground beef.
Cover. Bake at 325 for 2 hours.

Nacho Cheese Chicken Chowder

If you read my blog, you know I use my slow cooker a lot. The slow cooker is perfect for soups! I am always looking for new soup recipes to try. I found this great soup recipe over at My Kind of Cooking. Linda has the best recipes!!

I only had one can of Rotel tomatoes on hand, so I used regular diced tomatoes for the second can. Am I glad I made this change! I can't handle really spicy recipes. If I had used two cans of Rotel, this would have been too spicy for me. The cheese thickens the soup and adds a delicious flavor dimension. This one's a keeper, we'll be having it again soon!



Nacho Cheese Chicken Chowder

1 pound skinless, boneless chicken breast halves, cut into 1/2 inch pieces
2 (14.5 ounce) cans Mexican style tomatoes, undrained
1 (10 3/4 ounce) can nacho cheese soup
1 (10 ounce) package frozen whole kernel corn
Shredded Mexican style or cheddar cheese

In slow cooker, combine chicken, tomatoes, soup, and corn. Mix well. Cover. Cook on low 4 to 5 hours or high 2 to 2 1/2 hours. Sprinkle each serving with cheese. makes 6 servings.

Chicken Spaghetti - Pioneer Woman

There's a great blog party over at Happier Than A Pig In Mud. The 15th of every month, you can link up a recipe from that month's celebrity chef.

This month's chef, The Pioneer Woman, is well known in the blogsphere. I have to be one of the only bloggers who, until just recently, had never made one of her recipes. When I first saw this recipe, over a year ago, on my friend Susan of Baking With Susan's blog, I bookmarked it. For a year, I've passed it over when searching for ideas for the weekly menu. After making it, I am so sorry I didn't try it sooner. It's delicious and the perfect comfort food. The pimentos and green pepper give this dish some zip. Try this one soon, you won't be sorry.



Pioneer Woman's Chicken Spaghetti

Ingredients

  • 2 cups Cooked Chicken (I used two boneless chicken breasts)
  • 3 cups Dry Spaghetti, Broken Into Two Inch Pieces
  • 2 cans Cream Of Mushroom Soup (I used 1 can mushroom and 1 can chicken)
  • 2 cups Grated Sharp Cheddar Cheese
  • ¼ cups Finely Diced Green Pepper
  • ¼ cups Finely Diced Onion
  • 1 jar (4 Ounce) Diced Pimentos, Drained
  • 2 cups Reserved Chicken Broth From Pot (I used pasta water)
  • 1 teaspoon Lawry's Seasoned Salt
  • ⅛ teaspoons (to 1/4 Teaspoon) Cayenne Pepper
  • Salt And Pepper, to taste
  • 1 cup Additional Grated Sharp Cheddar Cheese

Preparation Instructions

Cook 1 cut up fryer and pick out the meat to make two cups. Cook spaghetti in same chicken broth until al dente. Do not overcook. When spaghetti is cooked, combine with remaining ingredients except additional 1 cup sharp cheddar.

Place mixture in casserole pan and top with remaining sharp cheddar. Cover and freeze up to six months, cover and refrigerate up to two days, or bake immediately: 350 degrees for 45 minutes until bubbly. (If the cheese on top starts to get too cooked, cover with foil).

Beer Braised Chicken Thighs

White meat or dark meat? For years I have been a white meat and only white meat eater. Lately, I've started eating chicken thighs, too. They're a lot more moist and you can't beat the price. I've watched a few episodes of Rachael Ray's new show, Week in A Day. This recipe caught my eye. I love the depth of flavor the beer brings to the chicken. This make a great weeknight meal. You can make the recipe ahead and just reheat for serving!!!.


Beer-Braised Chicken Thighs

Inactive Prep:1 hr 0 min
Cook:45 min
YIELD:4 servings
LEVEL:Easy

Ingredients

  • 8 pieces bone-in, skin-on chicken thighs
  • Kosher salt and freshly ground black pepper
  • 1 tablespoon extra-virgin olive oil
  • 1 link andouille sausage, casing removed and chopped, or 4 slices bacon, chopped
  • 1 onion, chopped
  • 2 ribs celery, chopped
  • 1 green bell pepper, seeded and chopped
  • 2 to 3 cloves garlic, chopped
  • 2 tablespoons chopped fresh thyme
  • 1 rounded tablespoon all-purpose flour
  • 1 (12-ounce) bottle lager beer
  • 1 (14-ounce) can diced tomatoes with chiles or stewed tomatoes
  • 1 cup chicken stock
  • 2 tablespoons hot sauce
  • Scallions, white and green parts, thinly sliced, for garnish
  • Warm baguette, for mopping

Directions

Pat the chicken thighs dry, and season with salt and pepper.

Heat 1 tablespoon extra-virgin olive oil in a Dutch oven over medium-high heat, add the chicken and brown on both sides in 2 batches.

Remove the chicken to a plate and spoon out 1/2 the drippings, and add the andouille sausage. Brown for 2 minutes and then add the onion, celery, pepper, garlic, and thyme, and cook to soften, for about 10 minutes over medium heat.

Add the flour, stir 1 to 2 minutes, and then pour in the beer and let the foam subside. Stir in the tomatoes, stock, and hot sauce. Let the sauce thicken a bit, and then slide the chicken into the pot and simmer to cook through. Serve with warm crusty bread, or cool and store for make-ahead meal.

Champagne Risotto with Leeks and Asparagus

We've been really busy these past couple of weeks. When I went to choose my recipe for today, I realized I had only one recipe in my drafts. Then I discovered I didn't have a picture! I decided to repost one of my favorites, Champagne Risotto with Leeks and Asparagus.

I posted this in my early blogging days when no one was reading my blog, so I don't even think it really counts as a repost. I love this recipe and it's one I've been making for years. Those of you who are leery of risotto, give this recipe a try! You won't be sorry, it's so delicious.

Cumin Seared Scallop Tacos

I love food tv. I remember years ago when the Food Network was first on the air. A friend of mine in Florida told me about the channel. I couldn't wait until we were able to get the channel in the midwest. Food Network was all about Emeril and Sarah Molten in those days. Now there's more chefs than you can count and there's a sister network, The Cooking Channel. While I don't watch The Cooking Channel as much as Food Network, I do watch some of the programs. One of my favorite shows is Kelsey's Essentials. Kelsey was one of my favorites from the 4th season of Next Food Network Star. Do you have a favorite food tv star?

I am always looking for new and different ways to serve scallops. When I saw the episode where Kelsey prepared these, I knew it was a recipe I wanted to try. I have to admit I didn't make the salsa. I used the salsa we purchased at Whole Foods to go on the Maui Maui we had a few days before. This makes a quick, easy and delicious weeknight dinner!




Cumin Seared Scallop Tacos

Ingredients

* Tomatillo Guacamole, recipe follows
* Cilantro-Lime Rice, recipe follows
* Mango Salsa, recipe follows
* Cumin-Seared Scallop Tacos
* 1 1/4 pounds large sea scallops (about 8)

* 1/4 teaspoon salt
* 1/4 teaspoon ground cumin
* 1 to 2 tablespoons unsalted butter
* 8 (6-inch) corn tortillas

* Tomatillo Guacamole
* 6 to 8 tomatillos, husked and coarsely chopped (about 8 ounces)
* 3/4 cup coarsely chopped fresh cilantro leaves
* 1 avocado, halved, pitted, peeled and diced
* 1/2 onion, coarsely chopped

* 1/2 jalapeno, coarsely chopped with seeds
* 2 cloves garlic, smashed and quartered
* Juice of 1 lime
* 1 teaspoon ground cumin
* 1 teaspoon salt

* Cilantro-Lime Rice
* 1/2 cup rice
* 5 sprigs fresh cilantro

* 1 cup chicken broth
* Juice of 1 lime

* Mango Salsa
* 1/2 cup diced mango
* 1/2 cup diced tomatoes
* 2 tablespoons minced onion

* 2 tablespoons chopped fresh cilantro
* 2 teaspoons minced Serrano chile
* Zest and juice of 1 lime

Directions
First prepare the tomatillo guacamole, cilantro-lime rice, and mango salsa and set aside.

Remove the tough ligament from the side of each scallop and discard. Pat the scallops dry with a paper towel to remove excess moisture. Season both sides of each scallop with salt, and cumin.

In a large cast iron skillet, melt butter over medium-high heat. Allow the skillet to get as hot as possible without burning the butter.

Sear the scallops, turning once, until golden brown on each side, and just cooked through, about 3-5 minutes total. Transfer to a platter and quarter.

To assemble, toast corn tortillas, if desired, over an open flame just until slightly charred. Fill each tortilla with 2 tablespoons rice, 1 tablespoon guacamole, 1 seared and quartered scallop, and top with mango salsa. Repeat with remaining ingredients.
To make guacamole:
Combine the tomatillos, cilantro, avocado, onion, jalapeno, garlic, lime juice, cumin, and salt in a food processor or blender and pulse until combined.
To make the rice:
In a small saucepan, bring the rice, cilantro, broth, rice, and lime juice to a boil over high heat. Reduce the heat to a simmer, cover and cook for 20 minutes, or until the rice is tender. Remove the cilantro sprigs and serve.
To make the salsa:
Combine the mango, tomatoes, minced onion, cilantro, chile, lime zest, and lime juice in a small bowl. Allow the flavors to macerate. Serve as a garnish for the cumin seared scallop tacos.

Spiced Chipotle Honey Chicken with Sweet Potatoes

Today's recipe is courtesy of an amazing blogger, Joanne of Eats Well With Others. Joanne is in medical school, is a runner and still maintains one of the best blogs on the blogsphere. If you're looking for a new chicken recipe, give this one a try. The flavors are delicious. I am not a huge fan or spicy dishes but I loved this one. The flavor of the sweet potatoes goes so well with the spice of the chile's. If you find it a little too spicy, you can cut back a little on the chile's or even scrape them off your piece before eating!


Spiced Chipotle Honey Chicken Breasts with Sweet Potatoes
Serves 4,

In The Kitchen with a Good Appetite

20 oz butternut squash, peeled and cut into 1-inch pieces
20 oz sweet potato, cut into 1-inch pieces
2 tbsp olive oil
4 chipotle chiles in adobo sauce, minced
3 cloves garlic, minced
2 tbsp honey
2 tsp cider vinegar
1 1/4 tsp kosher salt
1 tsp ground cumin
1/2 tsp ground cinnamon
4 boneless, skinless chicken breasts, rinsed and patted dry
chopped cilantro or basil for garnish

1. Preheat the oven to 400. Toss the sweet potatoes and butternut squash with 1 tbsp of the olive oil. Spray a roasting pan with cooking spray and then spread the sweet potatoes and squash over it. Roast for 15 minutes.

2. While the sweet potatoes and squash are cooking, in a small bowl, mix together the remaining tbsp of olive oil, chiles, garlic, honey, cider vinegar, salt, cumin, and cinnamon, until they form a paste. Rub the paste all over the chicken. Carefully place the chicken on top of the sweet potatoes and butternut squash. Put back in the oven and continue to roast until the chicken is just cooked through, about 25 minutes. Serve garnished with cilantro or basil.

Sweet Potato & Black Bean Soup

Do you use canned black beans or do you make your own? Since canned beans can be as much as 1.00 something a can, I decided to make my own. After doing some research, I settled on cooking them in the Slow Cooker. I soaked the beans for about 6 hours and cooked them for about 4 hours on high. The interesting thing was, my black beans became brown beans. It seemed most of the dark color was either in the water from soaking or in the water from cooking. Has anyone else experienced this?

I've seen quite a few recipes for soup with black beans and sweet potatoes or butternut squash. With these recipes as inspiration, I created my own recipe. This recipe makes a delicious but very spicy soup. I love the flavor from the addition of just a touch of cinnamon. You could easily add chicken or even some sausage to this soup.


Slow Cooker Black Bean and Sweet Potato Soup

1 onion, chopped
3 cloves of garlic, chopped
1 T. olive oil
1 large sweet potato, diced
4 cups vegetable or chicken broth
2 cups black beans
1 can Rotel peppers
1T. chili powder
2 t. cumin
1 t. smoked paprika
1/2 t. cinnamon

Chop garlic and onion. Heat olive oil in a skillet until sizzling, add garlic and onion. Saute until soft. Dice sweet potato. Combine all ingredients in crock pot. Cook on low 8 hours.

Roasted Red Pepper Corn Chowder

I am really trying to waste less food. I heard a staggering statistic last week. Every day we waste enough food to fill the Rose Bowl. What to do with the red pepper in the fridge that was almost at the end of it's shelf life? How about a soup? I love the flavor of roasted red peppers, especially in soup.

The original recipe called for 2 cups of roasted red peppers and 2 cans of creamed corn. I really don't like creamed corn, so I chose to just use the frozen corn. The texture of this soup was more of a broth and less of a cream soup. The red pepper gives this soup a wonderful rich flavor.





Corn and Roasted Red Pepper Chowder
Inspired by the New England Soup Factory Cookbook

6 Tbsp. salted butter
2 cups diced onions
1/2 cup diced celery
1 cup diced carrots
3 cloves of garlic, minced
4 to 5 Yukon gold potatoes, peeled & cut into 1/2" cubes
6 cups chicken stock or broth
2 tsp. ground coriander
1 tsp. ground bay leaves
3 lbs. frozen or fresh corn kernels
2 Tbsp. cornstarch dissolved in 4 Tbsp. cold water
2 cups light cream
1 roasted red pepper, pureed until smooth
2 tsp. Tabasco sauce
Kosher salt & black ground pepper to taste

In a stockpot melt the butter over medium-high heat. Add the onions, celery, carrots, and garlic. Sauté for 5 to 7 minutes. Add the potatoes and sauté for 5 minutes more. Add the broth and bring to a boil. Reduce the heat to medium and simmer until the potatoes soften but don't lose their shape, about 10 minutes. Add the coriander, bay leaves, and corn. Bring back to a boil and cook for 5 minutes.. Add the creamed corn and the cornstarch water mixture. Return to a boil and cook for 1 to 2 minutes. Add the cream, red peppers, cilantro, Tabasco sauce, salt and pepper. Bring the soup to a slow simmer for 2 minutes.
Makes 10 to 12 servings

Slow Cooker Smoky Apple Butter Ribs

I've been using my slow cooker a lot more these days, on average at least one if not two days a week. There are certain types of foods that are perfectly suited for the slow cooker, soups, stews and meat. These ribs become tender after the long cooking time. This recipe creates perfect, tender delicious ribs. They are flavored with a slight hint of smoke and a sweetness from the apple butter. Be careful with the liquid smoke, too much can overpower the dish!



Crock Pot Smoky Apple Butter Ribs
Recipe adapted from Crock Pot Recipe Exchange

3 lbs boneless pork country-style ribs
¾ teaspoon salt
½ teaspoon pepper
1 medium onion sliced
½ cup of apple butter
2 tablespoons packed brown sugar
1 tablespoon liquid smoke
2 cloves garlic, finely chopped
1. Sprinkle ribs with salt and pepper. In 3 ½ to 4-quart slow cooker, place ribs. Cover with onion slices. In small bowl, mix remaining ingredients, pour over ribs and onion.
2. Cover; cook on Low heat 8-10 hours.
3. Remove ribs from cooker; place on serving platter. Cover to keep warm.
4. Pour juices from cooker through strainer into 1 quart saucepan. Heat to boiling over medium-high heat; reduce heat to medium. Cook about 5 minutes or until sauce has slightly thickened. Serve sauce with ribs.
