Chai Tea Mini Cupcakes - Martha Stewart Cupcake Club

I have been such a slacker when it comes to participating in the Martha Stewart Cupcake Club. The last time I participated...September! I love cupcakes but it just seems like I never have enough time to participate in all of the baking groups or blog parties I'd like to. Do you like Chai Tea? I love it, almost more than coffee. When I saw this month's recipe was for Chai Tea Cupcakes, I couldn't wait to give them a try.



Unfortunately, I was disappointed. It will be interesting to see what everyone else thought. I cut the recipe in half and ended up with 24 mini's. I thought these were just BLAH! They only had a hint of Chai Tea flavor and the frosting wasn't very tasty. My other challenge with these, they were DRY. I feel like most of the Martha cupcakes I've made have been dry. If anyone has a secret for moist cupcakes, I hope you'll share.

  1. Sorry you were disappointed. The idea of chai tea flavor definitely sounds good. Unfortunately with cooking, the idea may sound really good but, then it can't live up to expectations. Nothing lost. :-)

    Try using pudding in your cakes. I think this gives them a great moistness. I'll try to post the how to in my new Tuesday tips series before your next MSC challenge!

    I've been thinking about you with all the storms blowing through. I hear about them on the news and always have a prayer in my heart that you are ok.

  3. Sorry about your disappointment! They look good though. I've never had Chai tea! I don't bake much but I notice sour cream in a lot of cake recipes, maybe that adds moisture?

  4. Hi Julie! It looks like it was a split decision on the cupcakes! Thanks for baking along with us! I've been tempted to start using canola oil in the recipes instead of butter. I know, many people are die-hard butter fans, but in my experience, oil makes a cake more moist. Hope you can join us next month for Tiramasu cupcakes!

  6. That is so frurstrating to go to the trouble of making something like this and doesn't turn out for you. I am waiting for you tiramisu cupcakes; these just have to be good.

  8. I would agree that these weren't the best cupcakes- my texture was not so much dry as bready. I'm hoping the tiramisu are better!

  9. That's too bad you were disappointed in the cupcakes. I love the flavor of Chai Tea too, but it sounds like there might be better recipes out there.

  10. i've only made a few of the cupcakes out of that cookbook but the ones I've made, I've loved! Can't win em all though! At least they look super cute.
