Gingersnaps - Sweet Melissa Sunday's

Today has been declared a day of prayer by Louisiana Governor Bobby Jindal. Let's all take a moment today to pause and reflect in whatever way you feel appropriate for our friends in the gulf.

Do you like your cookies chewy or crispy? I like mine soft and chewy! I think that's why I am not a Gingersnap fan. Since I am going to miss next week's SMS, I decided to bake these despite my feelings about Gingersnaps.

As with most SMS recipes, I cut the recipe in half. These were easy to make and use ingredients most of us have in our kitchens. Having read a few of the comments, I set the timer to pull these out a few minutes early. Not sure what happened but I missed hearing the timer. Don't you just love it when you do that? So my cookies were extra crispy. I tried one and they do have a traditional Gingersnap flavor. Since none of us are big Gingersnap fans, I may freeze these for a possible future cheesecake crust.

Does anyone have a recipe for Sour Cream Raisin Pie? It's my brother in law's favorite and I want to suprise him with one when we visit next week.

  4. I prefer my cookies soft and chewy too, but for some reason I just love those hard, hard cookies in the orange box that appear on the store shelves each October! Your cookies look very good!

  6. I also am a chewy cookie gal, but my husband likes his crunchy so I usually end up making both. A cheesecake sounds like the perfect way to use them!

  7. Glad to hear you gave these a try. They look tasty! I do find you either love or hate ginger snaps. I also like mine chewy. But using them as crumbs in a crust is a great way to use up the cripsy ones. A mango cheesecake would be delicious with a ginger snap crust. Thanks for baking along this week!

  9. Your cookies look good. I too am generally a fan of soft and chewy cookies but I do make an exception for gingersnaps :)
    I don't have a good sour cream raisin pie recipe but if you find one, I would love to see a post on it! I just recently tried a raisin pie for the first time and I was pleasantly surprised to find a new favorite.

  11. Your cookies look great, sorry they didn't turn out to your preference, thought it sounds like they'd have to be absolutely amazing to win you over on ginger snaps. I hope you find a good use for your cookie crumbs!

    I have never heard of a sour cream raisin pie. I hope you post about it if you find a good recipe.

  14. I prefer soft and chewy cookies too! My cookies were chewy this week despite being really thin. They weren't a favorite but still tasty. Yours look awesome!

    I've never heard of sour cream raisin pie either - hope you find a recipe. Maybe it's a regional thing?

    I never heard of raisin pie until very recently. Now I'm looking for a recipe too. Please let me know what you find :o)
