Sweet Potato Bread - SMS

A few months ago, I was struggling with blogging. I questioned whether or not I had what it took to blog on a regular basis. Lately I feel like I am in a rhythm with posting and cooking. It feels so good! When I first began participating in Sweet Melissa Sunday's, Sunday would come around and I would be rushing to bake and post by a reasonable hour. The past few weeks, I've had my post finished before Sunday. It feels so good!

When I read Melissa's comments on this recipe, I had a feeling I was going to like this bread. I love pumpkin bread and this reminded me of my pumpkin bread recipe. This was an easy recipe to put together. The only change I made was to the glaze. I didn't have rum, I substituted additional orange juice and a teaspoon of vanilla.

I don't own a full size bundt pan. Mine is a smaller bundt pan and is too small for a standard bundt pan recipe. I used 4 mini bundts, a mini and medium size loaf pans. The mini loaf and bundts were done in 45 minutes. The larger loaf pan took about 55 minutes.

I ate one of the mini bundts after it's first glazing. It didn't come out of the pan very well, so it was just begging to be eaten. How do you grease and flour those mini bundts? I didn't just like this recipe, I loved it.

  1. Try that cooking spray with the flour in it..it works really well!
    Im glad you enjoyed your mini, it looks very good. I liked this recipe too and made three little mini loafs of bread!
    So glad your able to blog still and not feel stressed!

    As for the bundt pan, I just spray Pam like crazy all over the pan and normally, it's pretty good. It hasnt really been too much of a problem for me.

    I had silicone bundtlet pans and threw them out cause I could never get them out in one piece. One can only eat a certain amount of Reject Bundtlets before it's just too much. (on the waist, that is.)

  9. Looks delicious! I never flour my pans. I buy the flour/butter sprays. I just spray the pans with that and I seldom have trouble.

  10. I'm always writing my posts at the last minute, even if I have baked ahead of time. The writing is definitely the hardest part of blogging for me.

    Your mini bundts look wonderful! I went the same route. As for greasing the pan, I usually just spray it either with regular cooking spray or the cooking spray with flour and I generally have good results.

  11. I too had troubles getting my bundt out of the pan :-( Oh well, it's how they taste that matters anyway!

    Glad that you're finding your groove with blogging! I too have been struggling a little (mostly because school has been getting busy), but hope to get back into it as things slow down once I start rotations.

  14. The little bundt looks darling! I had good success doing a tricky cake pan by using a pastry brush to aggressively brush soft butter into all the cracks and crevices.
