Classic Red Velvet Cake - Sweet Melissa Sunday's

It's a good day. A week after returning from vacation, I feel like I am back in the groove. It's Sunday and I am baking Sweet Melissa Sunday's. Unlike a lot of bloggers, I tend to bake and post all in the same day. I always feel really together when I have a couple of posts waiting in my queque. Today, there's....ZERO!!

I decided to make cupcakes instead of a cake. That way, hubby or I or both can take them to work. I also cut the recipe in half. A while back I found the greatest site for decreasing or increasing recipes. Since I am not a math whiz and tend to cut a lot of baking recipes in half, this site is a lifesaver!!!

This recipe is a breeze to make. I frosted them with the cream cheese frosting and decorated with some Valentines Day themed sprinkles. I baked these for 25 minutes but should have pulled them out of the oven at 20 minutes. I read everyone's hints about how the baking soda turns red food coloring brown AFTER I'd baked these. Mine are definetely more brown than red. The flavor of these didn't wow me. They are good but not great.

  1. I also read the comment about baking soda too late. I used my Wilton red gel coloring and my cake is more red than brown, sort of. I thought it was good. But, give me plain old chocolate cake any day. I will be curious to see what my daughter thinks since she is a red velvet cake fan. Oh, and thanks for the conversion site!!

  3. Your cupcakes look great! I think mine were sort of reddish-brown in color. My review on these was similar to yours - good, but not great. For me, they're just a vehicle to eat the cream cheese frosting on top :)

  4. Your red velvet cupcakes look delightful. You are right, these are perfect for lunch box treats.
    I smiled when you wrote about "feeling really together" when you have a couple of posts in the queque.......i woke up this morning with ZERO too (ugh). I also like having a couple in pipeline so that I don't feel stressed.

  6. I struggled with the red part too but then baked another RV cake with a slightly different recipe (that still used baking soda though) and it came out beautifully red! Think it's maybe the food colouring and the serious stuff is what's called for!! Probably not that healthy though! Thank you for baking along with me this week and your cakes look so pretty. R x

  7. I read the soda/powder too late as well. Mine were sliiiightly red, but not that beautiful red POP that I wanted. I'll be trying different recipes as this one didn't wow me.

  8. Your cupcakes looks cute! Especially with the red sprinkles on top. I used baking powder instead of baking soda and my cupcakes turned out pretty red. However I didn't like the flavor of these cupcakes. Oh well... you win some, you lose some :o)

  9. How sweet these are with the sprinkles on top! I also didn't know about the baking soda/food dye reaction until it was too late, but people didn't seem to mind.
