Butterscotch Pralines - SMS

I've never made pralines before, probably because I've always found them too sweet. Making these was one of those frustrating kitchen experiences. I didn't feel great to begin with, either the 24 hour bug or a touch of food poisining. Then as I was gathering all of the ingredients, my candy thermometer rolls on to the floor. It didn't really break but it chipped on the bottom, so I was pretty sure I shouldn't use it. Off to the store to get another one.

Once I got back with the thermometer and gathered the ingredients, the recipe went together easily. I think my mixture was too thick. I went ahead and spooned them out onto the parchment paper. I don't really think they look like pralines. Tim said they're good but needed a few more nuts.

  1. I think your pralines look pretty good. Pralines are sweet but, a little goes a long way and they are delicious.

  3. I hope you're feeling better Julie! I'd never made pralines before or even eaten one so this week's recipe was definitely an adventure. I tried to skip the butterscotch chips which was a mistake but I ended up making a second recipe which turned out well :) I'm glad to hear that Tim enjoyed the pralines!

  4. Bummer on the broken candy therm. You really were determined to make these prealines! I would have quit after I broke the CT! I think they look good. I enjoyed them!

  6. I've never made pralines so kudos for trying them! I love them, but I really can't eat an entire one. Just too sweet, I guess. But I'm sure willing to take bites of one all day long!

  10. I am so with you on your opening line. And this recipe doesn't change my opinion. I was wondering if it's possible to get a praline that's not cloyingly sweet. I too wanted more nuts- it needed at least two cups. ~sigh~ I'm sending mine to a friend who says her family likes pralines.

  12. I agree with the candy to nut ratio...I added a little more than the recipe called for and felt they could still use a little more. These were extremely sweet, but still tasty. Your pralines look great!

  14. I think yours look great. They are a bit more cookie-like in looks but I think the solidity would make them taste even better.

  17. Oh I certainly hope you feel better!!

    I learned a loooong time ago that if you are feeling under the weather, to NOT bake. Usually everything that CAN go wrong, WILL. And that just makes you feel worse.

    On a positive note, I think your pralines look deliciously thick and chunky!!
