Secret Recipe Club

One of my favorite things about participating in a blog hop is the new friends you meet. Secret Recipe Club introduces you to new blogging friends and new recipes! Here's how it works, each month you're assigned another person's blog, you choose a recipe from their blog and post about! Can you keep a secret? If you're going to participate in Secret Recipe challenge, you have to! You can't reveal the blog or the recipe until the posting date! How fun is that!! Secret Recipe Club is the creation of Amanda at Amanda's Cooking!

This month I was assigned the blog, Haggis and the Herring! Haggis and the Herring is a husband and wife blog team who feature "tasty recipes tested in our kitchen – drawing from flavours around the world including our English, European, Mediterranean and South-Asian food experiences." There were so many recipes to choose from, it was hard to narrow it down to just one.

We love roasted potatoes, so after much deliberation, I chose Crunchy Roasted Potatoes and Carrots. In this recipe you boil the potatoes and carrots before roasting. I've seen lots of recipes where you boil potatoes before deep frying them. I cut my potatoes into large chunks instead of a dice. I used 1/2 regular paprika and 1/2 smoky paprika. Mine didn't get very crunchy but maybe that's because I made them on a silpat instead of parchment? We really enjoyed these, they were just a little spicy with a lot of flavor.




Crunchy Roasted Potatoes and Carrots

Serve it as a side or eat it alone for the pure comfort-food value.
Ingredients
5 or 6 potatoes, diced, (peeled, optional)
2 carrots, peeled and sliced into 3/4" rounds
3-4 tbsp olive oil
2 tsp paprika
1/4 tsp cayenne pepper
to taste salt

Instructions
1. Boil potatoes and carrots in salted water until soft (15-20 minutes).2. Preheat oven to 400 degrees.3. Drain and run potatoes and carrots under cold water for 2-4 minutes, drain again and let dry for 2-3 minutes.4. In a small bowl, mix oil, paprika, cayenne and a pinch of salt.5. Toss potatoes and carrots in oil mixture and transfer to a parchment-lined baking sheet.6. Roast for 30-45 minutes, until outside is golden and crispy.

Carrot Soup with Ginger and Lemon

I've started buying vegetables in bulk at Costco. The prices are so reasonable. The challenge with buying in bulk is making sure you use them up. Otherwise, your good deal is no longer a good deal.

I love soups! I am always looking for new soup recipes. I found this recipe on epicurious and it got rave reviews. Tim came into the kitchen and asked what I was making. Carrot Soup??, turning up his nose. I knew I'd get this reaction, as I've mentioned many times on my blog, Tim's a meat man!




Instead of chicken stock, I used homemade vegetable stock. I love the beautiful color of this soup. This is a hearty soup with a nice mild carrot flavor. The addition of the lemon juice and zest gives it a nice kick.

Carrot Soup with Ginger and Lemon

Yield: Makes 4 Servings

1/4 cup (1/2 stick) butter
1 1/2 cups chopped onion
1 tablespoon finely chopped peeled fresh ginger
1 1/2 teaspoons minced garlic
1 1/4 pounds medium carrots, peeled, chopped (about 3 cups)
2 tomatoes, seeded, chopped (about 1 1/3 cups)
1 1/2 teaspoons grated lemon peel
3 cups (or more) chicken stock or canned low-salt broth
2 tablespoons fresh lemon juice
4 tablespoons sour cream

Melt butter in heavy large pot over medium-high heat. Add onion; sauté 4 minutes. Add ginger and garlic; sauté 2 minutes. Add chopped carrots, tomatoes and lemon peel; sauté 1 minute. Add 3 cups stock and bring to boil. Reduce heat, cover partially and simmer until carrots are very tender, about 20 minutes. Cool slightly.

Puree soup in batches in blender. Return soup to pot. Mix in lemon juice. Season with salt and pepper. (Can be made 1 day ahead. Cover and chill.)

Bring soup to simmer, thinning with more stock, if desired. Ladle into bowls. Top each with sour cream and grated carrot.

Glazed Carrots with Sage

The sage in my AeroGarden is growing like crazy. What do you think of when you think of sage? Thanksgiving dressing!! I remember as a child helping my mom with dinner and putting the sage in the pumpkin pie instead of the pie spice. Not sure what we did but I always laugh when I think of sage.

I have a big bag of carrots in the frig. Big bags of veggies at Costco are almost the same price as the smaller bags at the regular grocery store. I always make glazed carrots with brown sugar and honey. I need some different carrot recipes. I found this one on line and made a few modifications.




Glazed Carrots with Sage
2 tablespoons olive oil
1-1/2 pounds carrots, peeled and cut diagonally into 1 inch pieces
1/2 of a small onion, thinly sliced
10 to 12 fresh sage leaves, roughly chopped
salt and pepper
1/2 cup dry white wine
1/2 cup chicken stock

Heat the oil in a skillet over medium heat. Add the carrots, onion, and sage and cook, stirring frequently, until the onions begin to brown (about 8 minutes). Season with a touch of salt and pepper, add the wine and the chicken stock, and bring to a simmer. Cover the skillet and cook for about 12 minutes or until the carrots are tender (if necessary, add more stock or water as they cook to prevent scorching).

Uncover the skillet and simmer off enough remaining liquid so that the carrots are coated in a nice, moist glaze. Check for seasonings, adding more salt and pepper if needed, and serve.

My notes on this recipe: These were so flavorful. The sage adds a nice woodsy flavor to the carrots. This recipe will be one I will make again and again!

Baby Carrots with Dill Butter

This past weekend, Nebraska was treated to a Spring blizzard. The ground was so warm here that we didn't really have much accumulation but just to the north of us, they received 11 inches. I am ready for warmer weather so I can plant my herbs. For my birthday this year, my husband gave me an AeroGarden. It's a nice treat to be able to pick herbs even when there is snow on the ground. I've never done a lot of cooking with dill, so I was anxious to try Baby Carrots with Dill Butter. In addition to being pleasing to the eyes, the flavors were yummy!


Baby Carrots with Dill Butter
Adapted from All Recipes

1 (16 ounce) package baby carrots
4 tablespoons margarine
1 tablespoon chopped fresh dill
1 teaspoon fresh lemon juice
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper

DIRECTIONS
Place carrots in a saucepan with enough water to cover. Bring to a boil, and cook 20 minutes, until tender. Remove from heat, and drain. Gently toss with margarine, dill, and lemon juice. Season with salt and pepper.
