SMS - Strawberry Lemon Rosemary Muffins & A Winner

Sweet Melissa's cookbook contains numerous sweet and savory versions for these muffins. The Peach version of these muffins was the first recipe I ever baked with SMS. Carmelized Onion, Sage and Cheddar were my first savory muffins.

The first time I made these I learned the batter was very thick and the muffins tend to be on the dry side. With each subsequent baking, I've been adding a little more milk or cream and depending on the moisture in the fruit or vegetables, about 1/4 - 1/2 cup of sour cream.

Lemon and rosemary are two of my favorite flavors. I couldn't wait to taste these muffins. Unfortunately, I was a little disappointed. There was only a hint of the rosemary flavor and I could hardly taste the lemon. Rosemary can be such a strong flavor, I am always hesitant to add more but this is one recipe where more is necessary. With the price of strawberries right now, I decided to use frozen. I was a little concerned they might be too wet but I should have known better. Even with the addition of sour cream, these were still a little dry.

I am determined to figure out the perfect combination of milk, sour cream and vegetables or fruit for this recipe. I think it has the potential to make a fabulous muffin.

  1. Sounds like a different recipe! I'm not sure how I would like rosemary in with muffins though.

  2. They look great even though you were not too pleased with the end result. I reduced the flour to 2 cups after reading posts from previous muffins being too dry and dense.

  5. I keep forgetting to add sour cream and I know you are so right! I love your muffins and sorry the lemon and rosemary flavors did not come through like you were looking for. When you find the perfect ingredient ratio, I hope you share with the rest of us muffin people =). Thank you for baking along with me this week!

It's nice chatting with people who are familiar with Kansas City... and I am moderately familiar with Omaha, as well, as my grandmother lives there and more family lives across the river in Council Bluffs. I enjoy visiting both areas. My husband and I love the riverfront area in Omaha when we visit.

  11. I hear you...this recipe definitely needs tweaks. My first attempt at these months ago was awful. But this time I had success! I used sour cream in place of heavy cream and skim milk in place of whole milk. I also cut back on the flour by a generous 1/4 cup. The muffin was moist and had a nice texture. Good luck in your quest for the perfect muffin!

  12. I thought it was a thick batter but mine tasted great! I added a little more lemon zest I think- I just zested 2 lemons and about a tsp of rosemary and the hint of it is nice. I have the rest of mine frozen in zip lock bags for the kids to take to school! They won't mind if they are dry!
